Vegan Chocolate Chip Cookies

IMG_0087I made vegan chocolate chip cookies last night that were a big hit at the office today so I wanted to share the recipe.  I took a non-vegan recipe that I found online and did some improvising.  I also practice something that maybe exists or maybe I invented called intuitive baking so that even if I have a recipe I don’t tend to follow it exactly.  Instead I prefer to add or subtract things as it feels right to me.  It sounds crazy, but these cookies turned out great!  Give the recipe a try if you want!

Pre-heat oven to 375 degrees.

In a mixer, combine 8 oz of dairy free butter (I used original Earth Balance), 1/4 cup of white sugar, 1/4 cup of Turbinado sugar,1 1/2 cups brown sugar, 2 bananas, and 2 teaspoons of vanilla extract.

In a separate bowl, combine 3 3/4 cups of white flour, 1 1/4 baking soda, and 3/4 teaspoon of salt.

Slowly incorporate the dry ingredients with the wet ingredients.

Add a dairy free chocolate chip option(I used Enjoy Life Dark Chocolate Morsels).

Bake for 15 minutes.
